Veggie Shwarma Pita Sandwich
Who said you can’t enjoy a filling and delicious sandwich without the use of meat? With this veggie shwarma pita sandwich recipe, you can get all the flavors you love in a vegetarian-friendly way. This hearty meal is perfect for lunch or dinner, and it’s sure to become one of your go-to recipes!
Ingredients
Large pita breads

Eggplant, cut into thin slices
1
Red peppers, cut into thin slices

Israeli Olive oil
1/2 Cup
Garlic, minced
2 Tbsp
Ground Cumin
1 Tsp
Paprika
1 Tsp
Dead sea Salt and pepper to taste
Tahini sauce
1/4 Cup
Hummus
1/4 Cup
Chopped parsley and/or mint, to garnish (optional)
Instructions
Step 1
Preheat your oven to 350 degrees F (180°C).
Step 2
Line two baking sheets with parchment paper and spread out the eggplant and red pepper slices on them. Drizzle with olive oil and sprinkle with garlic, cumin, paprika, salt and pepper. Bake in preheated oven for 25 minutes or until vegetables are tender.
Step 3
Heat your pita breads in a hot skillet for about 30 seconds per side just until
warmed through. Fill each pita with generous amounts of the eggplant and peppers then top it off with hummus or tahini sauce if desired. Sprinkle some fresh parsley leaves on top if desired. Serve immediately!
