Potato Soup with Turmeric

Ingredients
Israeli Olive oil

Onion, diced

Juice from 1 lemon
Carrots, chopped

Butter
1 Tbsp
Ribs of celery, chopped

Garlic, minced
4 Cloves
Potatoes, peeled and cubed

Vegetable Broth
8 Cup
Ground turmeric
1 Tbsp
Dead sea Salt and pepper to taste
Instructions
Step 1
Begin by heating the olive oil and butter in a large pot over medium-high heat. Add the onions, carrots and celery to the pot and sauté until they become translucent (about 10 minutes).
Step 2
Than add garlic and cook about 2-3 minutes. Stir in turmeric and simmer an additional minute or so until flavors have blended together nicely.
Step 3
Add potatoes and stir to coat in the oil. Pour in the vegetable broth, bring to a boil then reduce heat and simmer for about 30 minutes or until the potatoes are cooked through.
Step 4
Remove from the heat and add lemon juice and salt, pepper to taste. Using an immersion blender puree the soup.
Step 5
Garnish with chives and parmesan cheese
