Israeli Flatbread With Zatar And Salad Topping

Ingredients
For the dough:
All-purpose flour
2 Cup
Active dry yeast
1 Tsp
Sugar
1 Tsp
Kosher salt
1/2 Tsp
Warm water
3/4 Cup
Israeli Olive oil
2 Tbsp
For the topping:
za’atar
2 Tbsp
Israeli Olive oil
1/4 Cup
Tomatoes, sliced

Large cucumber, sliced

Pitted olives
1/4 Cup
Fresh mint leaves
1/4 Cup
Lemon juice
Salt, to taste
Instructions
Step 1
In a mixing bowl, combine the flour, yeast, sugar, and salt. Mix well.
Step 2
Add the warm water and olive oil to the dry ingredients. Mix until a dough forms.
Step 3
Knead the dough on a floured surface for about 5 minutes until it becomes smooth and elastic.
Step 4
Place the dough in a greased bowl and cover it with a damp towel. Let it rest for 30 minutes until it doubles in size.

Preheat the oven to 450°F (230°C).

In a small bowl, mix the zaatar and olive oil to make the zaatar oil.

Punch down the dough and roll it out into a thin round shape. Place the dough onto a baking sheet lined with parchment paper.

Brush the zaatar oil generously over the dough, leaving a small border around the edges.

Bake the manoushe in the preheated oven for 10-12 minutes, until the edges are golden brown.

In a bowl, combine tomatoes, cucumber, olives and mint leaves, squeeze the lemon juice over the salad, add olive oil and season with salt and pepper to taste.

Arrange the salad and on top of the flatbread with zaatar.
