Israeli Bourekas
Bourekas are a classic Israeli snack made with savory fillings wrapped in phyllo dough. These cheesy spinach bourekas are the perfect appetizer or side dish for any occasion. Ingredients
Phyllo dough
16 ounce
Ricotta cheese
1 Cup
Crumbled feta cheese
1/2 Cup
Freshly grated Parmesan cheese
1/4 Cup
Eggs, beaten
2
Chopped fresh parsley
3 Tbsp
Dead sea Salt and pepper to taste
Baby spinach leaves, blanched and squeezed dry
2 Cup
Butter or olive oil
3/4 Cup
Toasted sesame seeds for sprinkling
Instructions
Step 1
Preheat oven to 375°F (190°C). Line baking sheet with parchment paper.
Step 2
Place phyllo dough on a lightly floured surface; cover with a lightly dampened cloth to prevent drying out. Take one sheet at a time; keep remaining dough covered. Brush entire surface of the phyllo with clarified butter or olive oil. Then cut into 4 inch squares.
Step 3
In medium bowl, mix together ricotta cheese, feta cheese, parmesan cheese, eggs, parsley, and season with salt & pepper as desired. Place about 1 tablespoon of filling in center of each square; top with a few spinach leaves. Moisten edges lightly with water; fold into triangle shape and seal; place onto prepared baking sheet. Brush top of each triangle with the beaten egg and sprinkle with sesame seedsl before baking.
Step 4
Bake in preheated oven for 15 minutes or until golden brown and crisp on the outside and the filling is cooked through. Serve warm or at room temperature
