Boneless Lamb Shoulder

Ingredients
Ground lamb 3/4 ounce
Chopped cilantro 1 Cup
Mixture of dried mint, oregano, za’atar, sage 1/2 Cup
"Green Spice" mixture 1 Tsp
Lemon zest 1 Tsp
Finely chopped garlic 2 Cloves
Israeli Olive oil 4 Tbsp
Boneless lamb shoulder 1
Date honey (Silan) 1.5 Tbsp
Instructions
Step 1
Mix the ground lamb, cilantro, dried herbs, spice, lemon zest, garlic and 2 tablespoons of olive oil.
Step 2
Fill the shoulder with the ground lamb mixture. Roll the lamb over the mixture.
Step 3
Preheat the oven to 350°F (180 °C)
Step 4
Truss the lamb: using butcher’s twine, tie the lamb in 2-inch (5 cm) intervals.
Step 5
In a small bowl, combine silan, remaining olive oil, and "Green Spice" spice mix.
Step 6
Place the shoulder in a pan. Coat with the silan mixture.
Step 7
Cook uncovered for 90 minutes.
