Ingredients
Large Aubergine 1 Pcs.
Garlic, crushed 2 Cloves
Tahini 2 Tbsp
Lemon, juiced 1 Pcs.
Ground Cumin 1 Tsp
Chilli Flakes (optional) 1/4 Tsp
Olive Oil for drizzling
Dead sea Salt and pepper to taste
Chopped parsley and/or mint, to garnish (optional)
Instructions
Step 1
Preheat oven to 200C/400F. Prick the aubergine all over with a fork then place on a baking tray and roast for 30-40 minutes until soft and blackened in places. Remove from oven and allow to cool slightly.
Step 2
Scoop the flesh into a bowl then add the garlic, tahini, lemon juice, cumin and chilli flakes (if using). Mash everything together until combined then season to taste with salt and pepper.
Step 3
Drizzle with olive oil then sprinkle with chopped parsley or mint (if using) before serving. Enjoy!
Notes:
? The Dip can be made ahead of time and stored in an airtight container in the fridge for up to 3 days. ? You can also roast the aubergine on a barbecue for that smoky flavour. Just place whole aubergines directly on the griddle and cook for 10-15 minutes turning regularly until cooked through.
