
Shimura Matzah takes its name from the Hebrew word ‘to guard.’ It is a mitzvah (commandment) that the Passover matzah be made specifically for the Passover seder, fulfilling the obligation to eat matzah as it is commanded in Exodus 12:17: “You shall guard the matzot.”

Shimura Seder Matzah

Yehuda Matzos is a beloved Israeli matzah manufacturer. It is now in the care of the seventh generation of the original founding family, the Ludmir family.
The bakery was first established in the small northern town of Zefat in 1921. After Israel was declared a state the company relocated to Jerusalem, the Holy City, in 1949, where they have since then, making and baking matzah, cookies, and biscuits in addition to matzah flour for home use.
